Cafeology
Cafeología is an institution dedicated to coffee research, education, and development. They began operations in 2010 in San Cristóbal de Las Casas, collaborating with multiple specialty coffee projects, primarily in the state of Chiapas.
Their philosophy has always been: "Shared knowledge is the cornerstone of our daily work." Thus, they carry out their mission to raise awareness about coffee growing, to empower coffee growers, and to ensure that collaboration among coffee professionals becomes a daily reality. Since then, they have diversified by participating in projects with coffee growers, processors, roasters, tasters, baristas, and coffee marketers.


They have collaborated with international brands such as La Cabra (Denmark), The Barn (Germany), Kaffeemacher (Switzerland), and Terres de Café (France). In 2017, they won three awards at the Mexican Cup of Excellence. In 2018, three Cafeología tasters participated as Cup of Excellence judges: Claudia Pedraza, Nidia Rodea, and Jesús Salazar. In 2020, they won the Good Food Awards (USA). They are also the main organizers of various programs, awards, and training sessions for the coffee community.
