Javier Debernardi
Javier is part of the fourth generation of coffee producers in his family in Huatusco, Veracruz. He has dedicated his entire life to coffee farming, primarily focusing on commercial or commodity coffee. With the goal of improving its quality and, in turn, improving the environment in which he and his family live, he has been planting, harvesting, and producing specialty coffee since 2016. Among his achievements, thanks to his perseverance and effort, is having reached the semifinals and finals of the Cup of Excellence two years in a row. They have also managed to become exporters and have their own processing plant, which they designed to be versatile and take greater care of their coffee.



Our relationship with Javier Debernardi has transcended business to friendship. Thanks to this, we have worked closely with him. We have visited his farms several times and have been involved in experimental coffee processes. In 2021, we collaborated with Cuatro Cuatros, a resort and vineyard in Valle de Guadalupe, Ensenada. In this partnership, Cuatro Cuatros provided us with various barrels, which were sent to Javier's farms. In these barrels, Javier carried out various fermentation processes with different varietals. The final product was sent to us for roasting and cupping. The best coffee was packaged and has been available at Cuatro Cuatros since December 2021.
It was also coffee from his farms that won us first place at the Sabor Awards in 2021 and 2023. That year, Javier and I planned to release a blend of his coffees to compete in the Sabor Awards. We roasted and cupped several processes and harvests until we arrived at the blend that received the most votes from the public, which ultimately gave us the award. Javier Debernardi has taught classes and talks at Ilustre to the general public and our team. We are constantly in contact with Javier to offer the best cup of coffee, continue reaping triumphs, and continue cultivating this great friendship.



Javier is committed to environmental stewardship, which is why the processes he implements on his farms are sustainable. For washed coffee, they use a machine called a demucilaginator, which uses much less water than traditional washing techniques. Javier's farms are very careful not to cut down trees, which is why they include endemic trees. The farms are managed ecologically and organically.
